Chayote

I managed to live over 60 years without trying chayote.  I tried it for the first time today, and I am sold.  It tastes much like a cucumber that stays crispy when cooked, and can be used like a potato or water chestnuts in cooking.  One plant can feed a family.

I found a great article on how to grow chayote in Florida.  It might be a little tricky to grow here in central Florida, but I think it will be worth a try.  The entire fruit is the seed, so no tiny seeds to deal with.  It can be sprouted on your kitchen counter, or planted directly in the garden.  You can grow from the chayote you find at your local grocer.
